Pumpkin Cupcakes with Cream Cheese Frosting

Fall is officially here & it has me thinking about some of my favorite fall treats.  I've made these pumpkin cupcakes with a cream cheese frosting that are delicious!  This moist cake has allspice, cinnamon, nutmeg & cloves that blend together in this tasty treat.  The frosting is your traditional cream cheese frosting with a sprinkle of nutmeg.....soooo good.  Can't wait for you guys to try them!

Minestrone with Italian Sausage

This is a hearty soup that has Italian sausage, carrots, celery, zucchini, green beans, onions, tomatoes, cabbage, pasta shells & several different spices.  It is very satisfying & it's one of my new favorites!  Makes about 10 servings.....delicious!

Pumpkin Bread

Fall is just around the corner & what better way to celebrate the season than with pumpkin bread.  This recipe was given to me years ago by my Mom & it's still one of our family's favorites today.  It's softly baked bread with fresh eggs, flour, sugar, pumpkin & spices.  You'll fall in love with this....it's good for breakfast or as a snack.  I sell these for $18 in a 9x13 or bundt pan.

Confetti Bites

I tried this out today & I really like them.  It's crescent rolls, cream cheese, Italian seasonings, bell pepper, green onions, carrots & broccoli. They are cut into squares & would be great to serve at a shower or luncheon.  Give them a try!  :-)

Pasta Salad


I have to thank my Mom for this recipe....she gave it to me years ago & we're still enjoying it!  It has spiral pasta, onions, celery, bell pepper, mixed vegetables, cheddar cheese mixed together in a creamy & sweet dressing.

Chicken in Wine Sauce

This is one of our family's favorite dishes.  It's a chicken breast & Swiss cheese in a creamy wine sauce & topped with stuffing.  I like to serve it with garlic mashed potatoes.....yummy!

Football Brownies!

I have finally found a homemade brownie recipe that I like to use for these footballs.  They have butter, fresh eggs & 2 (12oz) pkgs of semi-sweet chocolate chips in them & are topped with a chocolate buttercream frosting.  They are over 1" thick & are approx. 3 1/2 " x 1 1/2".....all I can say is YUMMY!  These will sell for $2.00 each or $20.00 for 10....I can also do a cheaper version of these using a mix, call me for details.  Oh yeah...when you order these you can request to keep the leftover pieces from cutting them into shapes to use on top of vanilla ice cream.

Miniature Chocolate Pies

My sister-in-law Coleta gave me a magazine that had a similar recipe to these Miniature Chocolate Pies.  It gave me the inspiration to create these sweet little bite sized pies.  My Daddy approved this recipe for me last night....he enjoys being one of my "taste testers".  I'm planning on having these in Chocolate & Coconut Cream flavors.

Taco Salad Ring

Each week I try to bake a new recipe.  Tonight I made this taco salad ring.  It has taco meatballs stuffed into crescent rolls & topped with lettuce, tomatoes, onions, cheese, salsa & sour cream.  It's really good!
